Exploring Hanoi's Autumn Cuisine
Date : 2021-09-24

Do you feel the same way I do? As September draws to a close, we start to feel a very "chill" vibe in Hanoi, with slightly cool weather that makes Hanoi truly beautiful and romantic. And what could be better than strolling through the capital's streets, savoring dishes that seem tailor-made for Hanoi's autumn?

Com (Green Rice Flakes):
When discussing Hanoi's culinary culture, knowledgeable people will naturally mention "cốm." Cốm is unique to Hanoi, a very "special" snack that has been preserved for generations. "Hanoi in autumn, the scent of milk flowers drifts, the green of new cốm..."
If it's Hanoi's autumn, cốm is indispensable. And when we see cốm, the phrase "Oh, Hanoi is in autumn!" automatically comes to mind. These tender green cốm grains, wrapped in lotus leaves, with a subtle aroma of pandan leaves, are a quintessential gift of a peaceful, gentle Hanoi.
Vong cốm is now a family heirloom passed down through generations of households in Vong village (Hau hamlet). You can also easily find street vendors selling cốm on streets like Xuan Thuy, Tran Thai Tong, or in the Dịch Vọng Hậu ward, Cầu Giấy district. Hanoi locals also process cốm into other delicious dishes like cốm fried patties, cốm cakes, and cốm sticky rice, all of which are very characteristic dishes.

Boiled Snails:
Would a plate of boiled snails like this fail to tempt you? Hanoi's autumn is also famous for its boiled snails. This hot snail dish combines the sweet, rich, and chewy texture of snails with a dipping sauce made from fish sauce, lime, lemongrass, chili, and fragrant ginger. Popular and sought-after snail restaurants include Oc Tong Duy Tan, Oc Ba Gia West Lake, Oc Luoc Dinh Liet Street, and Oc Chi Le Cua Bac.
In the past, snail vendors were always found outside school gates, selling coiled snails and edible snails for just five xu or a hao. Today, these vendors are no longer common, but traditional Hanoi boiled snails primarily feature rock snails, coiled snails, and edible snails. These are commonly referred to as "big snails" and "small snails," eaten with a triangular-shaped tin pick. Hanoi residents eat boiled snails year-round, but when the chilly autumn winds or the biting winter gusts seep through every crack in the door, the steaming heat and aromatic scent of this rustic delicacy become even more enticing than ever.
West Lake Shrimp Cakes:
In the slightly cool weather, a plate of shrimp cakes with a bowl of dipping sauce on the side is simply wonderful. Shrimp cakes are a dish that attracts many foreign tourists. It's a dish that has been around for quite some time and has become a specialty of Hanoi.
A delicious shrimp cake is one that is freshly fried, with a crispy batter and sweet shrimp. The price for a plate is around 50,000 VND for 2 people, which is quite reasonable.

Hot Rice Flake Cake (Bánh Đúc Nóng):
With this kind of weather, what could be better than holding a bowl of hot bánh đúc? Especially in the late afternoon when your stomach starts to rumble after a long day of studying and working. A steaming bowl of hot bánh đúc, emitting a rich aroma, is the rustic gift that Hanoi offers us.
With simple ingredients, old-fashioned bánh đúc was made with flour mixed with limewater. Over the years, bánh đúc has been innovated with new ingredients and preparation methods. The most prominent is the hot bánh đúc served with a fragrant topping of minced meat and green onion oil.

Pork Rib Congee (Cháo Sườn):
What could be more perfect than eating a bowl of smooth, finely ground congee, cooked with bone broth, where each spoonful of congee seems to melt in your mouth... in Hanoi's transitional autumn weather?
As a Hanoian or someone who has visited Hanoi in the fall, you have surely sat and enjoyed a bowl of hot cháo sườn. This dish has become an indispensable part of life for Hanoians when the weather turns to autumn. In the past, cháo sườn was a breakfast item for students going to school, but nowadays it has become a popular snack for young people in the afternoon or late at night.
Besides these, Hanoi's autumn offers many other equally attractive "specialties" such as sweet soup dumplings (bánh trôi tàu), cone-shaped savory cakes (bánh giò), savory and sweet fried cakes (bánh rán mặn, ngọt), and more. Hanoi truly deserves its reputation as a city famous for its cuisine, and this list is certainly not enough to satisfy you. So why don't we get up, put on a light jacket, grab our vehicles, and go experience it for ourselves.
